Crockpot Coconut Chicken Curry

I love the crockpot and love it when my family loves the meal. This is a keeper! It doesn't look the most appetizing, but I'm telling you it is yummy and easy.



4 boneless skinless chicken breast cut into a little bigger than bite size
1 whole onion  diced small
1 whole bell pepper diced small
1 6oz can of tomato paste
1 14oz can of coconut milk
1 1/2 teaspoon of salt
1 tablespoon of curry powder (I use a little bit more)
16oz bag of frozen peas

Dump into crockpot coconut milk, tomato paste and mix.
Then add onion,  bell pepper, chicken, salt curry powder and mix.
Cook on low for about 6 hours.
Then mix in frozen peas cook about 10 mins.
Serve over rice.

Backyard Friend

As you can tell I haven't made a post since August and its now November 11. Trying to make up on the posting by doing a few in one night. I'm not so good at this scrap booking thing. Oh well I try.

This picture was from some time in the spring, not sure why he let me hold him but it was nice to see him up close.

Peyton is 9!

Hard to believe that our little Peyton is 9. Peyton is the kindness kid I know, so loving, will share everything and makes friend with everyone. We love you Peyton so much and are so happy God picked us to be your family.

Peyton got to celebrate her birthday in New Mexico, she 2 small parties one at Jen's house and the other with her cousins (on Alicia's side of the family, Jacob and Vickie's kids) this was a nice treat since her in TN we don't have family to do parties with.


Spring 2015 Softball

Peyton played her first year of softball and love it! She was on a great team, had lots fun and made friends. Peyton is looking forward to moving up to girl pitch in the spring of 2016. We are looking forward to the nights out on the field.
