Crockpot Coconut Chicken Curry

I love the crockpot and love it when my family loves the meal. This is a keeper! It doesn't look the most appetizing, but I'm telling you it is yummy and easy.



4 boneless skinless chicken breast cut into a little bigger than bite size
1 whole onion  diced small
1 whole bell pepper diced small
1 6oz can of tomato paste
1 14oz can of coconut milk
1 1/2 teaspoon of salt
1 tablespoon of curry powder (I use a little bit more)
16oz bag of frozen peas

Dump into crockpot coconut milk, tomato paste and mix.
Then add onion,  bell pepper, chicken, salt curry powder and mix.
Cook on low for about 6 hours.
Then mix in frozen peas cook about 10 mins.
Serve over rice.

Enjoy :)

Backyard Friend

As you can tell I haven't made a post since August and its now November 11. Trying to make up on the posting by doing a few in one night. I'm not so good at this scrap booking thing. Oh well I try.

Peyton is 9!

Hard to believe that our little Peyton is 9. Peyton is the kindness kid I know, so loving, will share everything and makes friend with everyone. We love you Peyton so much and are so happy God picked us to be your family.

Peyton got to celebrate her birthday in New Mexico, she 2 small parties one at Jen's house and the other with her cousins (on Alicia's side of the family, Jacob and Vickie's kids) this was a nice treat since her in TN we don't have family to do parties with.


Spring 2015 Softball

Peyton played her first year of softball and love it! She was on a great team, had lots fun and made friends. Peyton is looking forward to moving up to girl pitch in the spring of 2016. We are looking forward to the nights out on the field.

I don't want to cry on my birthday

When Emma was a baby  Robert and I decided that our girls would have to wait till they where 10 to have their ears pierced, Emma ask if she could have ears done a few days before her birthday, she said "I don't want to cry on my birthday."
 
Emma was brave, not one tear. Very happy almost ten year old.

2015 T-Ball Team


 
Hayden enjoyed T-ball and his time with all this sweet kids. We had so much fun watching Hayden and his team play. Cant wait till next years games.

What Peyton Loves About AGH!


One of the requiments Peyton had to complete to receive her Sacagawa badge was to make a poster about the things she loves about AHG and display the poster in a public place for 2 weeks. She also had her first interview with troop broad, I was told she did great. Peyton is no longer a Tenderheart she is now a Pioneer.

Heart cookies

We took a break from school work to decorate heart cookies. Wal-Mart had these cookie kits on sale for .99 cents right after Valentines Day, don't be grossed out this picture was taken in February well before expiration date.




 

A visit from Grandma


Grandma (Dina) visited all the way from New Mexico in April for a three week stay. We had a great visit with her filled with perfect weather, lots of games at the ball field, and lots of relaxing time.
 
I had probably the 3 best weeks ever with my mom! It wasn't stressful at all! Yesterday, my mom was informed by her doctor that she might have cancer in her uterus. With all of the other health issues my mom has me worried. The doctor wants her to be seen by an oncologist right away.
 
I have to hand this worry over to my Heavenly Father. He knew this was coming, Cancer doesn't catch Him by surprise, so I will pray...

Our 2nd year of American Heritage Girls came to a close with awards night, we have enjoyed our 2 years with AHG and look forward to year 3!

In this picture we have a Tenderheart and Explore. At the end out the night we now have 2 Explorers.
 
 
On another note its been a while since I did a post, see I'm a slacker. I have a few pictures I would like to get posted, maybe later this week I will get a couple done (don't hold your breath).  Also My aunt Dee asked that I fill out some paper for a family tree (I haven't done it yet, UGH I'm the worst).

Build and Grow at Lowes


 
On Valentines day we went to our first Lowes Build and Grow. The kids loved it, hamming, following instruction and a finish product. All very happy with their work. We went for a 2nd time two weeks later and they built a monster truck. Tomorrow we will go a 3rd time, it is a nice free active on a Saturday morning. Hopefully I will get a picture tomorrow.

Snow cream!!!!

March 5, 2015, we got snow!!! We had a wonderful day, started with snow cream for breakfast.  We spent the day out sledding with our neighbors. Wish I took my phone while sledding for pictures. It was a great snow day!!!

Fruity Pebbles Cookies


 
Emma found this recipe on Pinterest, she saw we had Fruity Pebbles cereal and asked if we could make them. The cookies are easy to make and are different but you will eat more than just one to see if you like them. Emma and Peyton gave them thumbs up, Hayden didn't.
 
 
1 (3.4 oz) package of vanilla pudding mix
1 1/2 soften stick of butter
1 cup sugar
2 eggs
1 teaspoon of vanilla
1 teaspoon baking soda
2 cups Fruity Pebbles cereal
2 1/4 cups flour
 
Preheat oven to 350. line cookie sheet with parchment paper
 
Cream together butter and sugar. Add pudding mix till well blended. Add eggs and vanilla then slowly add the flour and baking soda until all is combined, fold in Fruity Pebbles.
 
Scoop 1" balls and place on cookie sheet, press flat just a bit, bake 10-12 minutes. Let cool and enjoy!
 
(the recipe said to add white chocolate chips didn't saw how much, we didn't add thinking it would be to sweet but I think you could try)

For our core subjects: Math, Reading, Grammar and Vocabulary we are using MobyMax. For Spelling we get our weekly words from K5 website. We also have a few different workbooks that we pull from.  For February we will be adding History and Geography with Heroes of History curriculum. Emma will be working more on her Cursive and Peyton will begin to learn Cursive.
