Crockpot Coconut Chicken Curry

I love the crockpot and love it when my family loves the meal. This is a keeper! It doesn't look the most appetizing, but I'm telling you it is yummy and easy.



4 boneless skinless chicken breast cut into a little bigger than bite size
1 whole onion  diced small
1 whole bell pepper diced small
1 6oz can of tomato paste
1 14oz can of coconut milk
1 1/2 teaspoon of salt
1 tablespoon of curry powder (I use a little bit more)
16oz bag of frozen peas

Dump into crockpot coconut milk, tomato paste and mix.
Then add onion,  bell pepper, chicken, salt curry powder and mix.
Cook on low for about 6 hours.
Then mix in frozen peas cook about 10 mins.
Serve over rice.

Fruity Pebbles Cookies


 
Emma found this recipe on Pinterest, she saw we had Fruity Pebbles cereal and asked if we could make them. The cookies are easy to make and are different but you will eat more than just one to see if you like them. Emma and Peyton gave them thumbs up, Hayden didn't.
 
 
1 (3.4 oz) package of vanilla pudding mix
1 1/2 soften stick of butter
1 cup sugar
2 eggs
1 teaspoon of vanilla
1 teaspoon baking soda
2 cups Fruity Pebbles cereal
2 1/4 cups flour
 
Preheat oven to 350. line cookie sheet with parchment paper
 
Cream together butter and sugar. Add pudding mix till well blended. Add eggs and vanilla then slowly add the flour and baking soda until all is combined, fold in Fruity Pebbles.
 
Scoop 1" balls and place on cookie sheet, press flat just a bit, bake 10-12 minutes. Let cool and enjoy!
 
(the recipe said to add white chocolate chips didn't saw how much, we didn't add thinking it would be to sweet but I think you could try)

red, white and blue 2012

4th of July this year was hot!!!! We enjoyed the day inside in the air conditioner with this very yummy light and cool cake.

Poke Cake

1 box white cake mix
2 cups boiling water
1 pkg (4 serving size) Jello gelatin any red flavor
1 pkg (4 serving size) Jello gelatin any blue flavor
1 tub (12oz) Cool Whip

make two 9" round cakes as per the box directions
pierce cake with large fork at 1/2inch intervals

stir 1 cup of the boiling water into each flavor gelatin in separate bowls
2 minutes or unit completely dissolved
carefully pour red jello over 1 cake and the blue jello over other cake
refrigerate for 3 hours

Dip 1 cake pan in warm water for about 10 seconds unmold onto serving plate
spread about 1 cup of whipping cream
Un-mold 2nd cake the same way and place on top of 1st layer
Frost with remaining whipping cream.

Refrigerate until ready to serve enjoy...

taco pasta salad

So yummy!!! Kids don't approve.

What you need:

1 package (16oz ) spiral pasta
1 lb ground beef
3/4 cup water
1 envelope taco seasoning
2 cups (8oz) shredded cheddar cheese
1 large bell pepper, chopped
1 medium onion, chopped
2 medium tomato's, chopped
2 cans sliced black olives, drained (small can)
1 bottle (16oz) Catalina salad dressing

What you do:

cook pasta according to package. rinse pasta in cold water and drain.
in a frying pan cook hamburger till no longer pink ], drain.
add water taco seasoning and simmer for 15 minutes
 place pasta in large bowl. add hamburger cheese, bell pepper, onion tomato olives and dressing mix well.
cover and refrigerate for at least 1 hour.

sloppy joe's

Yummy!!!! This recipe has become a favorite. You must try! 2 out of 3 kids approve, Hayden doesn't like hamburger meat.

What you will need:

2 Tablespoon of butter (I think i use 3)
3 whole carrots, shredded
1 small onion, or half of a large one, diced (small in my home)
2-3 cloves of garlic, chopped fine
1 cup water
1 lb lean ground beef
 2 tablespoons brown mustard (i use spicy brown mustard store brand)
1/4 cup ketchup
1/4 cup Worcestershire sauce
1/2 cup brown sugar
2 tablespoon chili powder

Directions:

In a frying pan take butter, carrots, onion and garlic. cook down till tender/soft (my kids don't like them to be crunchy. In another frying pan cook up the ground beef till no long pink, drain off. Now add carrots, onion garlic and all other ingredients. cook on medium till bubbles and then simmer for about 10-15 minuets.

banana bread

This recipe is so easy and I think the only banana bread recipe I have tried, but so good and easy why try another. It only makes one loaf and sometimes I add chocolate chips.


2 cups flour (all-purpose, whole-wheat or a mixture of both)
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup vegetable
1 cup sugar
2 eggs, beaten
3-4 bananas, mashed
1/2 teaspoon vanilla
3 tablespoons milk

Stir together dry ingredients. Beat together remaining ingredients. Add wet ingredients to dry ingredients and blend until just combined. Pour into greased loaf pan and bake at 350 degrees for 1 hour ans 15 minutes or until toothpick comes out clean. (I use a 9x6 pan like for a cake and bake for about 45 minutes.)

We loves this bread so much I;m baking about 2 times a month.

beefy tater tot casserole

I hope this to be a family favorite one day...

Ingredients-
1 lbs. ground beef
1 can (10.75 ounces) cream of chicken condensed soup
1 can (10.75 ounces) cream of mushroom condensed soup
1 1/2 cups of milk or sour cream or mixture of the two
1 package of (2 lbs) tater tots
1/4 lbs. each of cheddar and monetary jack cheese

Instructions-
preheat oven to 375
brown ground beef and drain
add soup and milk, mix together
in a 9x13 inch baking dish, arrange tater tots in a single layer on bottom
pour mixture over the top, spreading evenly over tater tots
sprinkle cheese on top
bake for 15 or 30 minutes

This is comfort food.

baked pumpkin oatmeal

I was hoping it would be a hit for the kids, I even added chocolate chips. Only 1 out of 3 liked it. Peyton
tried a little bit and said " its good, I like it!"

3 cups quick cooking oats
1/2 cup of brown sugar
1 cup milk
2 tablespoons butter
2 eggs
2 teaspoons baking powder
3/4 teaspoon salt
2 teaspoons vanilla
1/2 teaspoon cinnamon
3/4 canned pumpkin
1/4 cup brown sugar (for the top)

In a large bowl mix together all ingredients except the 1/4 cup brown sugar for the top.


Spread into a greased 9x13 pan.

Sprinkle remaining 1/4 cup brown sugar on top.

Bake for 350 for 20 minutes.

strawberry muffins

I love to cook, I love feeding my family. So I thought I would start posting recipes. New recipes and family favorites.

Strawberry Muffins...
   
     Ingredients

  • 21/4 cups sifted all-purpose flour
  • 1/3 cup granulated sugar 
  • 3 tsp. baking powder
  • 1/2 tsp. salt 
  • 2 eggs 
  • 1/2 cup oil 
  • 1/2 milk 
  • 1 tsp. vanilla 
  • 1 cup sliced strawberries 
     Preparation 
  1. Stir together flour, sugar, baking powder and salt
  2. Beat eggs, blend in oil, vanilla and milk 
  3. Add liquid to dry ingredients. Stir quickly just until moistened. 
  4. Fold in strawberries. 
  5. Spoon into well greased 21/2 inced muffin tins. 
  6. Bake at 400 f for 25 minutes or until golden brown.
  7. Remove to wire rack. Serve warm.
